Ghee Rice

Main Ingredients

  • 1.5 cups Basmathi rice
  • 2 tbsp ghee (use good quality ghee)
  • 8 to 10 Cashews
  • 1 medium onion sliced thinly
  • 10 raisins
  • 1 fresh Bay leaf
  • 2 sticks cinnamon
  • 3 star anise
  • 1 tsp cardamom
  • 1 tsp cloves
  • Half tsp crushed pepper (adjust as needed)
  • 1 green chili slit
  • 2 fresh tomatoes (diced)
  • 2 – 3 garlics (peeled)
  • 2 tsp garlic & ginger paste
  • Salt as needed
  • Coriander leaves

Instructions:

  • Rinse and drain rice until the water runs clear. Soak the basmathi rice for about 1 hour. Then, drain and put aside.
  • Slice the onions, slit green chili and chop garlic.
  • Add all the spices, fry till the spices release the aroma.
  • Add onions, tomatoes, green chili and fry until brown.
  • Add curry leaves and nuts. When the nuts turn golden, then add on raisins.
  • Sauté for a minute until you get a nice aroma of raisins and ghee.
  • Then, add on the drained Basmathi rice, mix it well with the sautéed mixture for about 1 minute.
  • Transfer the rice mixture together with all the ingredients into rice cooker.
  • Pour the sufficient water and cook the rice.
  • Garnish the ghee rice with coriander leaves. Serve immediately.
